I have tried many ways to lose weight including hiring a personal trainer and several diets but nothing really worked. I had been hearing about the Keto diet for a while now and I honestly didn’t agree with it. I just couldn’t wrap my head round eating so much fat.
After my second daughter, I had to do something. I decided to give the Keto diet a go. To be honest I am not so strict, let say I am only compliant seventy percent of the time, I have seen significant results. I have had to give up (well not really, more like significantly reduce) bulky carbs mainly rice and bread. So I have had to experiment a lot with different vegetable especially cauliflower.
The name of the recipe, cauliflower fried rice, is a bit misleading as there is actually no rice in it but you get the gist.
Ingredients:
1/2 a head cauliflower
1 cup raw king prawns, peeled and cleaned
1/2 sweetcorn
1 large carrots
1/2 a cup of chopped mixed peppers
3 tbs olive oil
1 Knorr Cube
Dried thyme
Curry powder
Directions:
- Cut the carrots and cauliflower into big chunks and place in a chopper/food processor and mince. You can grate them if you don’t have an electric chopper. I had a little bit of purple cabbage left so I added it.
2. Heat the oil in a wok or large frying pan and add the mixed pepper. I used frozen ones. Fry for about 2 minutes.
3. Add the minced carrots and cauliflower. Add the Knorr cube, some thyme and curry. Combine thoroughly.
4. Add the raw prawns.
5. Add the sweetcorn, combine properly and cook until the prawns are cooked.
Serve hot an enjoy!
